Spring is springing! The birds are starting to chirp, the flowers are starting to bloom... but that won't stop us from trying this variation of a Fall favorite. This healthy-ish apple crisp inspired recipe is baked in apples for a presentation that will wow your dinner guests, and it's gluten-free.
Ingredients (for 6 servings):
8 Honey Crisp or Granny Smith apples (6 for the shell, 2 for the crisp)
1 lemon
1/4 cup almond flour
1/3 cup old fashioned rolled oats, gluten free if desired
1/4 cup brown sugar
1/4 cup raw chopped pecans
1 and 1/4 teaspoon cinnamon, divided
Pinch of salt
2 tablespoons cold butter
1/4 cup pure maple syrup
Pinch of nutmeg
Cooking instructions:
Grease a 8×8 inch baking pan
Pre-heat oven to 350
In a medium bowl, combine all the ingredients for the topping: almond flour, oats, brown sugar, chopped pecans, 1/4 teaspoon of cinnamon, and pinch of salt
Chop cold butter into small cubes and mix into topping mixture, squishing it with your hands until combined
Place mixture in the fridge
Peel, core, and chop 2 apples into 1” cubes and place in large bowl
Squeeze half a lemon over apples to prevent them from browning
Mix 1 tablespoon of cinnamon, pinch of nutmeg, and maple syrup over the apples and mix together
While you allow the apple mixture to sit, use a melon baller to scoop out the inside of the 6 apples so walls of the apples are 1/2 - 1” thick
Squeeze the other half of the lemon into the scooped apples
Take topping mixture out of the fridge and mix half the mixture into the large bowl with the sliced apples
Fill the scooped apples with apple mixture and sprinkle remaining toppings on top
Bake in the oven for 45 minutes
Allow to cool before serving and enjoy!
